Choose Laguiole for old-fashioned craftsmanship

Thursday, November 10th, 2011

Technology may keep us connected and make our lives more efficient, but it can never replace the nostalgic appeal of old-fashioned craftsmanship. We admire these items for attention to detail, exceptional quality and a showcase of artisan training and skill.

Laguiole is a timeless cutlery brand from the Thiers area of France that is probably best known for its distinctive folding table knives, but elegant standard knives are also produced here. In 1920 a cutler’s son named Pierre Dubost began production of Laguiole knives in a small workshop.

Chefs Warehouse is offering a beautiful set of six Laguiole standard table knives (R695). As with all Laguiole knives, the blade is fashioned in superior stainless steel, cut, polished and sharpened during 25 production stages. To partner the set, we have six elegant forks in sturdy stainless steel (R625).

Laguiole’s three-piece cheese set in stainless steel (R495) offers understated functionality, and suits a variety of hard and soft cheese styles.

All Laguiole items are sold in distinctive wooden packaging that includes a certificate of guarantee.

Sharpen your skills!

Tuesday, August 23rd, 2011

For a true test that separates the pros from the cooks, watch a chef in action with a beautiful piece of stainless steel. While amateurs hack and chop with knife in hand, professional chefs effortlessly mould their blades to slice and dice ingredients to the nearest millimeter. It’s why an experienced chef can be mesmerizing to watch.

Want a bit of that? Liam Tomlin will help you sharpen your knife skills this Saturday. He’ll make it look effortless and easy. It will be R250 well spent.

When it comes to knives, Liam says the bottom line is technique. Then it’s practice, practice, practice…

In our Knife Skills course he will demonstrate how to bone a duck, fillet a side of salmon or carve a piece of beef. From a chef’s knife to paring knife, mandolin and even food processor, Liam will show off the essential blades no self-respecting cook would ignore. He’ll provide handy tips and answer questions about preferred brands and styles (we sell some of the industry favourites too at chefs warehouse. He’ll advise how to look after your new steel beauties, and – importantly – how to avoid slicing your fingers through proper positioning.

Professionals and amateur cooks welcome.

This Saturday 27th August, 10am – 1pm. Chefs Warehouse. And again on Saturday 29th October, 10am – 1pm. R250pp.

Sharpen Your Knives.

Wednesday, February 9th, 2011

Truth is, most professional chefs would take one look at your kitchen knives and probably laugh their heads off at how blunt they are. So, unless you want to stand sharpening your knives for three hours on a manual sharpener, drop your knives off at Chefs Warehouse on a Monday blunt and pick them up Tuesday sharp enough to cut through your kitchen table. Okay, not really, but they’ll be sharp enough that you’ll notice a significant difference. And remember, blunt knives are dangerous. They slip off what you’re cutting and more often than not end up embedded in your finger. Sharp knives cut where you want them to cut. Enough said.

The Wusthof Knive Set & Block.

Thursday, October 21st, 2010

If you really, really want to spoil someone (who enjoys being in the kitchen) this holiday season, then here’s a rather special gift: the Wusthof knife set. Wusthof knives are used by professional chefs the world over because of their solid feel and sharp edge. Each knife is forged in Germany from one piece of high carbon steel to ensure extraordinary sharpness and easy maintenance.

This 9-piece set is from their Classic range, and includes a peeling knife, utility knife, serrated edge knife, bread knife, carving fork, carving knife, chefs knife, sharpening steel and the very handy kitchen shears.  Then of course, the beautiful wooden knife block to store them in. The set & block is available at Chefs Warehouse for R4,800. Go on, spoil someone (or yourself) rotten.

Slice It Up.

Tuesday, June 22nd, 2010

If you want to take slicing to the next level, you’d do pretty well for yourself to get one of these Beriner turning slicers. They can create continuous strands of grated vegetables, spiral-sliced carrots, potato strings and a whole lot more. The varying blade options (4 different blades) make the slicer even more versatile and suitable for most types of produce. The Beriner mandolin is also a great item, made from hardened plastic which doesn’t buckle over time like so many stainless steel mandolins do. Just be careful of your fingers – the blade is seriously sharp.

And a reminder – good knives should never be blunt, so remember you can bring your own kitchen knives in to be sharpened at Chefs Warehouse. Drop off Monday, pick up Wednesday. Easy as that.

The Berkel Prosciutto Slicer.

Wednesday, April 14th, 2010

You get knives. Then you get big knives. Then you get this thing, which just arrived at Chefs Warehouse. The Berkel prosciutto slicer is a work of art as much as it’s a premium grade commercial slicer. You’d want to put this out front in your restaurant so all the customers can watch you slice perfect paper-thin slices of ham right in front of them. Kind of like ‘prosciutto theatre.’ Genius.

Knives.

Thursday, April 1st, 2010

Chefs Warehouse & Cookery School stocks a very impressive collection of professional chefs knives, with ranges from Wusthof, Scanpan, Global as well as Sabatier (France) and Shun (Japan). Aside from being an essential tool in every kitchen, a good knife makes a great gift. And if you decide to buy a knife from us, you get a complimentary service with it: return up to four times a year to get it sharpened by our professional knife sharpener. That said, a blunt knife is a dangerous knife, and something we really hate to see. So you’re welcome to bring your own knife or knife set to us for sharpening at any time.
