Liam hosted the poultry class this past Saturday, as part of his ongoing 20-part Basic Techniques & Methods of Cookery course. Participants were taken through various preparation and cooking techniques, including rendering fat and making confit and much more. Groote Post were kind enough to supply wines for the class. Their estate near Darling in the Swartland is a consistent producer of quality wines and well worth a visit. The Groote Post Pinot Noir and Shiraz were a great partner to several of the dishes, which included Peking Duck Consommé, Duck Rillette, Roulade of Corn Fed Chicken with Parsley Puree & Red Wine Jus and Coq au Vin.
